Egg-Free Recipe Inspiration

We all know breakfast is the most important meal of the day. It kick starts your metabolism, replenishes your glucose levels and gives you the energy you need to burn throughout the day. However, we have been scrambling to find eggs on the supermarket shelves since November last year, so we have gone through the archives of our Henderson’s recipes to bring you some egg-free inspiration.


One of our favourite go-to weekend breakfast recipes is french toast! Sweet or savoury, served with Henderson’s bacon. Unfortunately with the egg shortage we are seeing in the supermarkets currently, some of our recipes need to be adapted. Fortunately for you, we have found a way to still enjoy the taste of this mouth watering classic.


Eggless French Toast


Ingredients:

  • 8 pieces Henderson’s Streaky Bacon

  • 1 cup milk

  • 1 Tbsp cornstarch

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • 4 slices bread (your choice)

  • 2 tbsp butter

  • 1 banana

  • Maple syrup to serve

Recipe:

Step 1: Heat a large non-stick pan over medium heat. Cook Henderson’s Streaky Bacon for approximately 3 minutes on each side or until golden brown. Set aside.

Step 2: In a shallow bowl combine the milk, cornstarch, vanilla, and cinnamon. Whisk until everything is combined and the cornstarch is dissolved.

Step 3: Place a slice of bread into the milk mixture and soak for 15 seconds before flipping and soaking the other side.

Step 4: Heat a large non-stick pan over medium heat. Add 1 tbsp butter and melt before placing two slices of bread into the pan.

Step 5: Cook for approximately 3 - 4 minutes on each side or until golden brown. Repeat with the remaining 2 slices of bread.

Step 6: Plate and top with sliced banana, Henderson’s Streaky Bacon and maple syrup.


Breakfast isn’t the only meal we are a few eggs short for. Below are some tasty recipes to get you by for lunch and dinner too. If you’re a pasta lover then you can’t go past(a) our Summer Pasta with Salami. The tangy addition of the sun dried tomatoes scream summer evenings near the pool. One of our favourites is this Italian Potato Salad, packed with a plethora of  nutritious ingredients. This potato salad is perfect as a main or a side dish to complement the barbie. You WILL be back for seconds!


With salami being a common theme here, Henderson’s Salami contains NO nitrates, sulphites or phosphates, and NO artificial flavouring, colours or preservatives. It’s also dairy and gluten free, making it the easy choice for so many salami lovers.


If you are after some wet weather recipes then look no further! Our take on the classic Mac and Cheese won’t just warm your tummy, it will warm your soul! The addition of truffle oil gives it that extra creaminess we crave and the panko bread crumbs give it a delicious crunch!


Another pasta option is our Baked Penne with Salami. A great recipe for families with fussy eaters. It also has the option of incorporating extra hidden vege, win-win!

One of the reasons everyone enjoys eggs so much other than for the taste is the nutrient value they hold. With approximately 12g of protein in 2 eggs, some ways we can still get the same nutritional value in our morning meal is to swap them for foods that hold similar macro nutrients.


Here are some protein packed foods you can include in your diet to make up for the lack of eggs on the shelves.


Chickpeas 8g protein per half cup

Cottage cheese 12g per half cup

Almond butter 7g per 2 Tbsp

Cheddar cheese 7g per slice

Lentills 8g per half cup

Henderson’s Bacon 14.6g per 80g

Quinoa - 7.5g per cup

To build a well balanced breakfast we suggest the following:

  • Protein: 10 to 35% of the total kCal.

  • Carbohydrates: 45 to 65% of the total kCal

  • Fats: 20 to 35% of the total kCal

We also don't want to forget our friend fibre. Fibre is super important for the health of the digestive system and lowering cholesterol. We suggest aiming for 10g at breakfast which will put a nice dent in your daily intake. The recommended daily intake of fibre is 25 grams for women and 35 grams for men.

Everybody’s energy requirements will differ but this is a good guide to make sure your plate has all the macronutrients you need to face the day ahead.


Although it is a stressful time for farmers and shoppers alike, this is also a time to get creative with your meals. Add a new recipe to your shopping list this week and try something new.
