
Sliced pears with bacon and chilli
Ingredients
140g Henderson’s Middle Eye Bacon
3 ripe pears, sliced lengthways
3 Tbsp honey
½ tsp chilli flakes (optional)
2 Tbsp red wine vinegar
Instructions
Step 1
Cut bacon into pieces approx 1cm long by 0.5cm wide. Cook bacon over medium heat in a non stick pan until golden and crispy. Use a slotted spoon to transfer to a small bowl.
Step 2
In the same pan, add honey and mix with the residual bacon fat. Arrange the pear slices in a single layer. Cook for approximately 5 minutes or until pears are softened and caramalised.
Step 3
Arrange pears on a plate and press down 1-2 single pieces of bacon on top of each.
Step 3
In the same pan still over medium heat, add the red wine vinegar and stir into the juices. Let simmer for 1 minute and then pour over the pears. Sprinkle with chilli flakes and serve.
