For the Dough:
400 g all-purpose flour or farina 00
1 tsp salt
1 Tbsp sugar
1 Tbsp dried oregano
7 g active dry yeast
300 ml lukewarm water
For the Filling:
100g tomato paste
75g Henderson’s Italian Salami
2 tsp italian mixed herbs
½ cup grated cheese
Instructions
Step 1
Sift dry dough ingredients into a large bowl and mix together. Make a well in the centre of the dry ingredients and slowly add the water. Knead until the dough is of playdough like consistency.
Step 2
Place dough in a greased bowl and cover with glad wrap. Place in a warm place and leave till doubled in size (1.5-2 hours).
Step 3
Tip the dough onto a flour dusted work surface and roll it out to a rectangle of 25cm x 35cm.
Step 4
Spread tomato paste, cheese, mixed herbs across the base. Cut salami slices in half and arrange on base.
Step 5
Cut the base in half lengthwise, then each length into four to create 8 squares. Fold each square in half (like a book) and stack next to each other in loaf tin. Cover with gladwrap, and leave to rise for an hour. Preheat the oven to 180 degrees.
Step 6:
Remove glad wrap and bake for 20-25 minutes till golden. Serve with lashings of butter or a cheeky dip.
