Henderson's Middle or Streaky Bacon
Fresh free range eggs
Firm ripe avocado
Wholegrain bread of your choice
Butter, Salt & Pepper
Optional fresh herbs
Fry your bacon until nearly crispy, then break eggs into a hot pan, and pop toast down.
If you like your eggs sunny side up, use a second pan and place a lid over them until the top is no longer wet, then remove and let their edges crisp up.
Slice avocado in half and remove seed then slice lengthways into 8 strips.
Butter toast, and arrange your breakfast on your plates.
Add salt and pepper to taste, or scatter finely chopped parsley, thyme or chives on top.
