Bacon Chutney


500g Henderson’s Middle Bacon
2 large brown onions or 4 shallots if you like it sweeter
½ cup brown sugar
½ cup water

⅓ cup strong brewed black coffee
1 Tbsp balsamic vinegar

1 tsp maple syrup


Step 1

Slice the bacon into pieces and cook until golden brown. Remove the bacon along with some fat from the pan and set aside.

Step 2

Add the onions or shallots and cook until soft. Add the brown sugar and cook for a few minutes until caramelized.

Step 3
Add coffee, water and cooked bacon along with the pan juices. Simmer until it thickens and resembles a jam consistency.

Step 4
Stir through the balsamic and maple syrup and put into jars. We recommend refrigerating from there and eating within a few days.
