Bacon and Apple Lettuce Cups
Ingredients
8 rashers of Henderson's streaky bacon, diced
1 apple cored and diced. Skin on.
1 head iceberg lettuce
2 tbsp butter
1 clove garlic, minced
1/4 cup pure maple syrup
2 tbsp soy sauce
1/2 tsp mustard powder
Instructions
Step 1
Cook bacon in oil over medium heat until bacon is golden. Set aside to cool.
Step 2
Rinse and dry lettuce leaves.
Step 3
In a small saucepan, heat butter over medium-high heat. Add garlic and saute for 1 minute. Add maple syrup, soy sauce and mustard powder. Cook, whisking for 3 minutes until hot and bubbling. Immediately reduce heat to low and keep warm until ready to use.
Step 4
Add the bacon, apple and maple sauce to a bowl and toss to coat. Distribute into lettuce cups and enjoy. We promise you’ll go back for seconds!
